In large bowl beat 3 eggs, then mix in:
1 cup matzo meal
2 tablespoons peanut oil
1/2 teaspoon salt
1/2 cup water
3 tart apples, sliced into small fine pieces
When well mixed, drop by tablespoons into hot oil and fry until golden brown. Drain on absorbent paper and serve with sugar or a mixture of sugar and cinnamon.
This is a tasty unleavened pancake recipe for Passover.
Please note that while there are things I could have changed in this recipe to make it conform to my own preferences, I chose to be faithful to present this recipe as I found it. If you'd like to use this recipe but make it more healthy by substituting some ingredient(s), by all means do so! For example, you might prefer to use coconut or olive oil instead of peanut oil if you are feeding someone allergic to peanuts. If you do use peanut oil, a couple of tablespoons of finely chopped peanuts might make a fine addition to this recipe. Otherwise use walnuts, almonds or pecans!
