Shake or whisk well to blend together:
1/2 cup extra virgin olive oil
1 tablespoon roasted sesame oil
1 tablespoon ground sesame seeds
Juice of 1 or 2 limes
1/2 teaspoon honey
1 teaspoon salt
1/8 teaspoon chipotle powder (very hot, adjust to your taste)
1/2 teaspoon ground ginger
This is a Thai-style dressing.
Please note that while there are things I could have changed in this recipe to make it conform to my own preferences, I chose to be faithful to present this recipe as I found it. If you'd like to use this recipe but make it more healthy by substituting some ingredient(s), by all means do so! For example, you might prefer to use sea salt--and a bit less of it.
When I made this recipe I did not have any limes, so I substituted lemon juice. And since I did not have any chipotle powder I looked on the internet for a substitution and found that it was similar to cayenne pepper, but with a smokey flavour. I followed the suggestion to use the same amount of cayenne pepper powder plus a drop of smoke flavour. I could have used two.
I also blended this recipe in a machine, which made it white and milky. It was very good and looked perfect in my finely chopped cabbage and kale coleslaw!
